Ruby cacao is derived from ruby cacao beans, which are found in Ecuador, Brazil and Ivory Coast. Ruby has no added colors or flavorings and has a sweet and sour taste that’s distinctive from the bitter profiles of other chocolate. Some say it has abundant berry notes that lends its self to be paired with fruit, coffee, tea, wines, cheeses, and herbs.
